In Dehesa Maladúa, they have found in the past the way to preserve a harmonious relationship with Nature, recovering traditions and ways of making crafts. They have applied all their efforts to recover the Manchado de Jabugo lineage officially considered today in danger of extinction and that once reigned in the dehesas. Ecologically produced Manchado de Jabugo faithfully reproduces what the Iberian pig was in other times, since it is born and raised in the pristine habitat of the Mediterranean forest, in the heart of the Sierra de Aracena and Picos de Aroche Natural Park (Huelva , Spain), an ecosystem declared a Biosphere Reserve by UNESCO. Pigs enjoy the privilege of freely grazing all year round among holm oaks, cork oaks and gall oaks, which naturally guarantees the sustainability of a fragile ecosystem while respecting ecological cycles and biodiversity. The special genetics of these pigs and the feeding regimen throughout up to three montaneras explain that the quality of these hams is above that obtained with other varieties of Iberian pig. Very limited production, so the hams receive special attention in their preparation.
